How do you make food more on-trend, cute and portable? Roll it into balls! These ones couldn’t be simpler to make, and they look a treat. They have extra fibre from the wheatmeal biscuits and dried fruit as well the nutritional bonus of PediaSure.

Ingredients

  • 10 scoops PediaSure powder (chocolate)
  • 1 packet (250g) wheatmeal biscuits
  • ¼ cup cocoa powder (or raw cacao)
  • ¼ cup desiccated coconut
  • 8(medjool) dates, pitted
  • 1 x 395g can sweetened condensed milk
  • 2 Tablespoons 100’s & 1000’s

Method

  1. Process biscuits, PediaSure, cocoa and coconut into a rough powder.
  2. Add dates and process until well combined.
  3. Add coconut oil and condensed milk until mixture comes together.
  4. Roll tablespoons of mixture into a ball press one side in 100’s & 1000’s.
  5. Place on a tray lined with baking paper and chill before serving.
  6. Store in the fridge for up to 2 weeks. Can be frozen.

Tips:

  • Great for the lunchbox
  • For bigger kids not into 100’s & 1000’s, roll balls in coconut instead
  • You could swap the wheatmeal biscuits for any sweet biscuit
