Rainbow chocolate balls

How do you make food more on-trend, cute and portable? Roll it into balls! These ones couldn’t be simpler to make, and they look a treat. They have extra fibre from the wheatmeal biscuits and dried fruit as well the nutritional bonus of Pediasure.
Preparation time: 30 minutes (plus chilling time)
Makes:   40 balls

Ingredients:

10 scoops Pediasure powder (chocolate)
1 packet (250g) wheatmeal biscuits
¼ cup cocoa powder (or raw cacao)
¼ cup desiccated coconut
8 (medjool) dates, pitted
1 x 395g can sweetened condensed milk
2 Tablespoons 100’s & 1000’s

Method:

  1. Process biscuits, Pediasure, cocoa and coconut into a rough powder.
  2. Add dates and process until well combined.
  3. Add coconut oil and condensed milk until mixture comes together.
  4. Roll tablespoons of mixture into a ball press one side in 100’s & 1000’s.
  5. Place on a tray lined with baking paper and chill before serving.
  6. Store in the fridge for up to 2 weeks. Can be frozen.

TIPs:

  • Great for the lunchbox
